Recipe: Coconut Waffles with Peach-Blueberry Sauce
Breakfast and BrunchCOCONUT WAFFLES WITH PEACH-BLUEBERRY SAUCE
"My family loves the fruit sauce, so I double that part of the recipe."
3 cups all purpose flour
4 Tbsp baking powder
1 cup shredded coconut
2 tsp sugar
2 eggs, beaten
2 cups milk
4 tsp shortening, melted
1/2 tsp salt
Peach-Blueberry Sauce (recipe follows)
In a large mixing bowl, mix together flour, shredded coconut, salt, sugar and baking powder. Add milk, beaten eggs and melted shortening. Beat well.
Cook waffles in a hot well-oiled waffle iron until golden brown.
Serve with Peach-Blueberry Sauce
PEACH-BLUEBERRY SAUCE
Yield: 1 1/2 cups
1 cup sliced fresh peaches, divided use*
1 cup fresh blueberries, divided use*
2 Tbsp sugar
1/2 cup unsweetened apple juice
1 dash ground nutmeg
Combine 1/2 cup peaches, 1/2 cup blueberries and remaining ingredients in a small sauce pan. Bring to a boil, reduce heat and simmer uncovered, 15 minutes. Remove from heat and add remaining fruit, stirring well. Serve warm over waffles.
*Frozen, thawed fruit may be used in place of fresh fruit. Chop the frozen peaches into smaller bite-sized pieces.
