Recipe: Coffee-Date Bars

COFFEE-DATE BARS

"These are chewy with dates and nuts and have a pleasingly strong coffee flavor."

1 cups sifted regular flour
2 tablespoons instant coffee
1 teaspoon baking powder
1/4 teaspoon salt
3 eggs
1 cup sugar
1/2 cup finely chopped pitted dates
1/2 cup coarsely chopped walnuts

Measure flour, instant coffee, baking powder, and salt into a sifter. Set aside.

Beat eggs until light in a medium-size bowl; beat in sugar slowly; continue beating until thick, then beat in dates and walnuts. Sift flour mixture over and fold in. Spread in a greased baking pan, 13x9x2-inches.

Bake in moderate oven (350 degrees F) 35 minutes, or until a wooden pick inserted in center comes out clean. Cool completely in pan on a wire rack; cut into bars.

Makes 3 dozen bars
