Recipe: Cold Spaghetti Salad

Since your family likes pasta, maybe they'd like one of these salads. Enjoy your cookouts!

COLD SPAGHETTI SALAD

1 green pepper
1 med. onion or green onions, chopped
1 lb. spaghetti
1 regular size bottle Wishbone Italian Dressing
3/4 jar Salad Supreme (McCormick Spice)
1 to 2 tomatoes, diced
1 cucumber, peeled, seeded and diced

Cook and drain spaghetti. Chop pepper and onion. Mix Salad Supreme and spaghetti. Add dressing, pepper and onion. Add tomatoes and cucumbers. Chill overnight (much better than the same day). Mix before serving.

CREAMY PESTO SALAD

1 (1.2oz) pkg. Knorr Creamy Pesto Pasta Sauce Mix
3/4 c. regular or light mayonnaise
1/3 c. milk
2 Tbsp. red wine vinegar
1 pint (2 cups) cherry tomatoes -- halved
8 oz. pasta twists or rotelle (about 4 c) -- cooked, rinsed and drained
1 c. (4 oz) shredded or cubed mozzarella

In large bowl, stir pasta sauce mix, mayo, milk, and vinegar until blended. Add tomatoes, pasta and cheese; toss to coat. Cover; chill to blend flavors. (Add one of the following: 1 cup diced cooked chicken, 1/2 cup slivered salami slices, or 6 oz. cleaned cooked shrimp to make a meal.)

MEDITERRANIAN PASTA SALAD

1/2 c. olive oil
3/4 c. parsley, chopped
2 Tbsp. garlic
4 tomatoes, peeled and chopped (or a bunch of cherry tomatoes)
1 sm. can sliced black olives
1 c. feta cheese, crumbled
1/4 c. fresh basil, chopped
2 Tbsp. lemon juice
14 oz. cooked pasta (like penne)

Heat olive oil with parsley, garlic and olives. Pour over pasta. Toss with lemon juice, basil and feta.
