Hi Angie, how about grilled vegetables? Cut up some of your family's favorites (be sure they're sturdy enough to handle grilling), toss them with olive oil and minced garlic, put them on skewers and season with salt and pepper. You can even wrap them in foil and let them cook on the grill while you grill meat.
