Recipe(tried): Corn Bread (microwave)

Breads - Muffins, Quick Breads
This is a recipe for corn bread that I use a lot. And it is microwaved which is great for this hot weather.

Corn Flake crumbs
1/4 Cup butter, melted
1/4 cup sugar
1 cup buttermilk
2 eggs
1 cup flour
2/3 cup cornmeal
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp soda

Generously grease a 4 cup microwaveable fluted ring, then sprinkle corn flake crumbs to coat inside of ring. Combine melted butter, sugar, buttermilk, and eggs; stir in flour, cornmeal, baking powder, salt and soda. Mix until blended. Pour into ring. Bake 6-7 minutes on full power, turning once halfway through cooking.

It cooks the best on a turn table even though I have a microwave that is supposed to eliminate that need. 6 min. in my micro is just right.
