Recipe: Corn Chowder (using salt pork and soda crackers) (1950's)

CORN CHOWDER

1/4 pound salt pork
1 large onion, sliced
4 potatoes, sliced
2 cups water
6 soda crackers
3 cups milk
2 cups cream style corn
1 teaspoon salt
1/4 teaspoon paprika

Cut salt pork into cubes and brown in large saucepan. Remove salt pork and drain off all but about 2 tablespoons fat.

Add onion to fat in saucepan and cook until yellow.

Add potatoes and 2 cups water and cook until potatoes are soft.

Stir in crackers which have been soaked in 3 cups milk; add corn, salt, and paprika. Heat to simmering.

Just before serving sprinkle crisp salt pork over top.

SERVING SUGGESTION:

AFTER-BOWLING SUPPER:
Corn chowder, toasted crackers, butter, vegetable salad, fruit pancake, milk and tea.
