CORN RELISH TOPPING
2 teaspoons extra-virgin olive oil
1 teaspoon red wine vinegar
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 cup cooked corn kernels
1/2 cup grape or cherry tomatoes, cut in small chunks
1/4 cup finely chopped red onion
1 tablespoon chopped fresh basil leaves
Whip oil and vinegar together in medium bowl; season with salt and pepper. Stir in corn, tomatoes, onion and basil; cover and chill.
Spoon 2 tablespoons corn relish on cooked hot dog; serve.
