Recipe: Cornstarch Pudding (9)

Cornstarch Pudding 1

4 Tbsp. oleo, melted
1/2 c. cornstarch
1 1/2 c. sugar
1/4 tsp. salt
4 c. milk
4 egg yolks

Stir oleo, cornstarch, sugar and salt; add milk slowly. Cook slowly until thickened. Beat egg yolks slightly in a bit of pudding, then cook until yolks are done. Add 2 teaspoons vanilla; cool.

Cornstarch Pudding 2

3 c. milk
6 Tbsp. cornstarch
1/2 c. sugar
1/2 tsp. salt
1 tsp. vanilla extract
fruit wedges and whipped cream
(optional)

Scald 2 1/2 cups milk. Blend sugar, salt and cornstarch to the other 1/2 cup milk, making a smooth paste. Add this gradually to the hot milk mixture. Stir to keep smooth. When mixed well pour into a mold. Chill until firm. To serve unmold onto a platter and garnish with fruit wedges and spoons of whipped cream.

Cornstarch Pudding 3

2 c. milk
1/4 c. sugar
2 Tbsp. cornstarch
1/8 tsp. salt
1/2 tsp. vanilla

Scald milk in top of double boiler. Mix sugar, cornstarch and salt. Add milk and cook until thickened, stirring constantly. Add vanilla and chill. Serve with cream. Serves 4.

Cornstarch Pudding 4

2 c. milk
1 1/2 Tbsp. flour
1 1/2 Tbsp. cocoa
1 egg
1 1/2 Tbsp. cornstarch
1/2 c. sugar
pinch of salt

Put milk in double boiler over medium heat. In small bowl, combine and mix, until smooth, the remaining ingredients. When milk starts to boil, add this mixture slowly. Stir constantly while boiling, until thick. Serve hot or cold. Serves 4.

Cornstarch Pudding 5

1/2 c. sugar
2 eggs
4 Tbsp. cornstarch
1/2 tsp. salt
4 c. milk
2 Tbsp. butter
3 tsp. vanilla

Mix eggs, sugar, salt and cornstarch and cook in double boiler. When thick add butter and vanilla. Cover with wax paper until cool

Cornstarch Pudding 6

1/3 c. sugar
1/4 c. cornstarch
1/8 tsp. salt
2 3/4 c. milk
2 Tbsp. margarine
1 1/2 tsp. clear vanilla

Mix sugar, cornstarch and salt; gradually stir in milk. Bring to boil over medium heat, stirring constantly, and boil for 1 minute. Remove from heat. Stir in margarine and vanilla. Serve warm or chilled. The whole process is much faster in the microwave. A good base for banana pudding. Also add cooked rice and cook a little longer to have creamy rice pudding.

Cornstarch Pudding 7

1 c. milk
2 1/2 Tbsp. sugar
1 egg
1 Tbsp. cornstarch
flavoring (vanilla, lemon, etc.)
1 Tbsp. cocoa (optional)

Heat milk with sugar (and cocoa). Moisten cornstarch with a little milk and egg. Then add to hot milk. Add flavoring (vanilla with cocoa); stir until thick. Cool and serve.

Cornstarch Pudding 8

4 1/2 c. milk, divided
4 to 5 Tbsp. cornstarch
3 eggs
1/2 c. sugar

Heat 4 cups milk in saucepan to near boiling. Put cornstarch in small bowl and slowly add 1/2 cup milk while stirring. Slowly add to hot milk, stirring until boils (2 minutes) and thickened. Beat together eggs and sugar until thick and lemon colored. Stir into boiled milk mixture as quickly as possible to make a fluffier pudding. Add 2 teaspoons vanilla and pour into serving dish immediately. Serve warm or cold.

Cornstarch Pudding 9

2 Tbsp. cornstarch
3/4 c. brown sugar
1/4 tsp. salt
2 c. milk
2 Tbsp. butter or margarine
1 tsp. vanilla

Mix cornstarch, sugar and salt; add 1/4 cup milk. Stir until dissolved. Scald remaining milk; add butter. Add to sugar mixture. Cook over hot water, stirring constantly, until thick. Cover. Cook 10 minutes; add vanilla.
