I quite often take a potato salad like the one below especially when dinner is
going to be late(regular occurence). I just cook the potatoes with dinner the
night before, make it up after dinner & pop it in the fridge till next day.
CORONATION POTATO SALAD
Serves 1
8ozs new potatoes, cooked & cooled
2ozs cooked chicken, diced
1oz red bell pepper, diced
2 spring onions, finely chopped(green onions I think you call them)
2 tbsps sweetcorn
lettuce, roughly shredded
3tbsps fatfree mayo
1tbsp lowfat sourcream
1/2tsp curry powder
Line bowl with lettuce. Combine mayo, sour cream & curry powder. Stir in
chicken & veggies. Pile on to lettuce & chill before serving.
