Cottage Cheese Cookies
To make 48
9 tpsp. butter or lard, softened - 120 ml.
1 1/2 cups sugar - 375 ml.
2 eggs, lightly beaten - 2
2 1/2 tbsp. fresh lemon juice - 37 ml.
2 tsp. grated lemon peel - 10 ml.
1 cup cottage cheese - 1/4 liter
2 cups flour - 1/2 liter
1 tsp. baking powder - 5 ml.
1 tsp. salt - 5 ml.
Cream the butter with the sugar until fluffy. Beat in the eggs, lemon juice and lemon peel. Press the cottage cheese through a sieve and add it to the batter, beating well. Sift the dry ingredients together, add them to the batter and mix thoroughly. Drop the batter by the teaspoonful onto buttered baking sheets - spacing the mounds well apart. Bake in a preheated 400 F. (200 C.) oven for about 15 minutes, or until the cookies are lightly browned.
