Recipe: Delicate Peanut Cookies (using yeast) (1972)

DELICATE PEANUT COOKIES

1 pkg. active dry yeast
2 tbsp. warm water
1 cup margarine, softened
1/2 cup sugar
1 egg yolk
1/2 tsp. vanilla flavoring
2 1/4 cups sifted flour
2 egg whites, slightly beaten
2 cups finely chopped salted peanuts

Dissolve yeast in warm water.

In large bowl of electric mixer, cream margarine and sugar together on medium high speed until light and fluffy. Add egg yolk and continue beating. Blend in softened yeast, vanilla and flour. Chill for 8 hours or overnight.

WHEN READY TO BAKE:
Using a level tablespoonful, form dough into balls, dip into egg whites and roll into peanuts. Place onto lightly greased cookie sheets.

Bake in a 350 degree F oven for 10 minutes.

Makes approximately 8 dozen
