COWBOY CHILI
3/4 pound extra lean ground beef
1 medium onion, chopped
2 cloves garlic, minced or pressed
1 (15 ounce) can stewed tomatoes
1 cup beef broth
1 to 2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano leaves
1/2 to 1 teaspoon salt
1/4 teaspoon cayenne pepper, optional
1 (15 ounce) can pinto beans
Crumble beef into heavy pot or Dutch oven. Add the onion and garlic. Cook over medium to high heat until meat is browned, about 10 minutes.
Add tomatoes, beef broth, chili powder, cumin, oregano leaves, salt, and cayenne, if used. Cover. Simmer, stirring occasionally, for 1 hour.
Add the beans. Simmer 30 minutes longer. Add water if the chili becomes too thick.
Serve piping hot.
Makes 4 servings
