Recipe(tried): Crab Imperial

I'd love to share it. It's the best I've ever had and being from Maryland, I've had lots and lots of it. I'm SURE there's no personal bias on my part! (Yeah, right!)

Crab Imperial

1 lb. jumbo lump backfin
2 slices white bread, crust removed
2 eggs, beaten
4 T mayonnaise
1 tsp. prepared mustard
1/2 tsp. chopped parsley
salt, pepper and worcestershire sauce to taste

Clean crab meat and remove cartilage, taking care not to break up those large lumps of meat.
Cut bread into cubes.
Combine eggs, mayo, mustard, salt, pepper and worcestershire sauce.
Add bread and parsley.
Carefully fold in crab meat.
Spoon into crab dishes.
Top with white sauce (see below).
Sprinkle with paprika.
Bake 15 - 20 minutes at 350.

White Sauce

2T butter
2T flour
1/2 tsp. salt
1 cup milk
Melt butter, stir in flour and salt. Add milk gradually. You can also add a drop of worcestershire sauce if you like.

Hope you enjoy it. As far our family is concerned, it's the best seafood Maryland has to offer.

Mom also had a great idea for keeping the crab dish from slipping around on the plate when you're tring to eat. A little dollop of mashed potato holds it right in place and, with some parsley stuck in it, it's even a nice garnish. Enjoy! Any ideas for side dishes that are light and easy? I'm all ears!
