One is very quick and easy ...The other is made from scratch but simple to make
Crab Stew
Serves 6
2 cans cream of potato soup
2 cans cream of celery soup
4 soup cans milk (less if you want the soup thick)
1 med. onion chopped
3/4 stick butter
1 pound crabmeat
2 cups half and half
1/4 cup sherry
Saute the chopped onion in butter until soft.
Add remaining ingredients and simmer over low heat or in a double boiler until heated through out.
(To make a thicker soup add less milk)

She Crab Soup
Yield: 10 servings
1/4 cup butter
1/4 cup plain flour
8 cups half and half
2 cups whipping cream
salt to taste
1/4 teaspoon white pepper
1/4 teaspoon mace
1 teaspoon Worcestershire sauce
2 pounds crabmeat*
1/4 cup she crab Roe or grated egg yolk (optional)
In the top of a double boiler over hot water combine the butter and flour. Cook to make a golden roux.
Add half and half and whipping cream gradually, stirring all the time.
Stir in seasonings and crabmeat.
Cook for 25 to 30 minutes over boiling water.
Add 1 teaspoon sherry (or to taste) to each serving and sprinkle the roe or grated egg yolks for garnish.
*Shrimp or other shellfish may be used instead of crab.
