Cranberry Chip Cookies
Source: Best of Country Cookies
1/2 cup butter or margarine -- softened
1/2 cup shortening
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
1 cup vanilla chips
1 cup dried cranberries
1 cup chopped pecans
In a mixing bowl, cream butter, shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine flour, baking soda and salt. Gradually add to creamed mixture. Stir in the chips, cranberries and nuts. Drop by tablespoonfuls 2-inches apart onto ungreased cookie sheets.
Bake at 375 degrees for 9-11 minutes or until golden brown. Cool for 2 minutes before removing to wire racks to cool completely.
