Recipe: Peanut Butter Balls (using bran cereal and powdered milk)
Desserts - Cookies, Brownies, BarsPEANUT BUTTER BALLS
"Mom made these for us for as long as I can remember. They are a great in between meals or after school. Easy to make and great tasting too! Yes, they even have bran (the good for you stuff) in them. Enjoy!"
2 cups peanut butter*
2 1/2 cups whole bran cereal**
2 cups instant nonfat dry milk powder***
1 1/2 cups raisins
3/4 cup honey
In a large bowl, mix together the peanut butter, bran cereal, powdered milk, raisins and honey.
Using your hands or a wooden spoon. Roll dough into walnut sized balls (or press the mixture into a small scoop or melon ball scoop and place on a cookie sheet).
Refrigerate until serving. Refrigerate leftovers. May be frozen.
*Half the peanut butter may be substituted with Nutella (1 cup peanut butter and 1 cup Nutella).
**Bran buds are easier to roll than shredded or stick-shaped bran. If using bran flakes, crush before mixing with the peanut butter and honey. Varying amounts of wheat germ, oats (not old-fashioned), and / or oat bran for the cereal may be used, depending on what I've got on hand. For a real crunch use half bran and half granola.
***The dry milk powder may be whirled (1 cup at a time) in the blender or food processor for a smoother consistency. Half the amount of dry milk powder may be used in the recipe but you may need to add more cereal for the right consistency and refrigerate the mixture for easier rolling.
VARIATION:- May be dipped in melted chocolate bark.
