Recipe: Cranberry Melt-In-Your-Mouth Cake

CRANBERRY MELT-IN-YOUR-MOUTH CAKE

2 cups fresh cranberries, rinsed, picked over, and patted dry
1 1/2 cups sugar, divided use
1/2 cup chopped nuts
2 eggs
1 stick (1/2 cup) margarine, melted
1 stick (1/2 cup) butter, melted
1 cup all-purpose flour

Preheat oven to 325 degrees F. Grease a 10 inch pie plate.

Mix the cranberries, 1/2 cup of the sugar, and the nuts and pour into prepared pie plate.

Beat together the eggs and remaining 1 cup sugar. Add the cooled melted margarine, cooled melted butter, and flour, stirring to blend well. Pour the batter over the cranberry mixture.

Bake for 50-60 minutes.

Serve plain or with vanilla ice cream.
