Recipe: Crabmeat, Shrimp, and Crawfish Penne Pasta (NOT Red Fish Grill)

CRABMEAT, SHRIMP AND CRAWFISH PENNE PASTA
1 lb. penne pasta, uncooked
1/2 cup minced garlic
1/2 cup finely chopped green onions
1/2 cup minced shallots
1 quart heavy (whipping) cream
2 cups parmesan cheese
salt and pepper (to taste)
1 lb. shrimp, deveined (can be done in food processor)
1 lb. crabmeat
1/2 lb. crawfish tails
Boil pasta until al dente. Rinse in cold water to prevent from overcooking.
Sweat down garlic and shallots.
Add cream and simmer over medium heat until reduced by half. Stir occasionally.
Whisk in Parmesan cheese, salt and pepper until smooth. Add shrimp and continue to simmer until shrimp are parcooked (2-3 minutes).
Add remaining seafood and pasta. Toss until shrimp are cooked through. Finish with fresh Parmesan cheese sprinkled on top. Serve.
Note: Lobster is a great substitute if crawfish is not available.
