Recipe(tried): Cream of Spinach Soup and Muffins...

Hello Everybody,

Tonight we will be having a light dinner...Cream of Spinach Soup

serves 4-6

2 T. butter
1 small leek, chopped about 1-1 1/2 cups
1/2 t. pepper
2 garlic cloves, minced
pinch of nutmeg
1/2 stalk celery, chopped
1 10 oz. pkg. frozen chopped spinach, thawed and drained
1 1/2 c. crumbled feta cheese
2 1/2 c. milk

Saute leek, pepper, garlic and nutmeg. Add celery, spinach and enough water to cover, about 2 cups. Stir well and bring to a boil. Reduce heat and simmer for 15 mts. Add feta and stir. Put into blender with milk to puree.Fresh Strawberry Muffins

2 1/2 C. self-rising flour
2/3 cup sugar
3/4 tsp. cinnamon
1 1/2 C. sliced fresh strawberries
1 cup buttermilk
1/3 cup margarine, melted
1 1/4 tsp. vanilla extract
1 egg, lightly beaten
1 egg white, lightly beaten
Vegetable cooking spray
1 1/2 T. sugar

Combine flour, sugar, and cinnamon in a large bowl and stir well. Add fresh
strawberries and stir well. Make a well in the center of the mixture.

Combine buttermilk, margarine, egg, and egg white; stir well. Add to dry
ingredients, stirring just until moistened.

Divide batter evenly among 18 muffin cups coated with cooking spray. Sprinkle
1 1/2 T. sugar evenly over mufins. Bake at 350 degrees until golden brown.
Remove from pans immediately and let cool on a wire rack.
