HALF WAY COOKIE BARS
"The meringue topping and chocolate chips will melt down into the dough onto the bottom of the mixture."
1 cup margarine, softened
1/2 cup granulated sugar
1 1/2 cups brown sugar, divided use
2 egg yolks, beaten
1 tablespoon water
2 cups flour
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1 package chocolate chips
FOR THE TOPPING:
2 egg whites
1 cup brown sugar
Preheat oven to 350 degrees F. Lightly grease a cookie sheet.
Cream margarine and granulated sugar and 1/2 cup brown sugar together; set aside.
Beat egg yolks, water, and vanilla and add to margarine and sugar mixture; set aside.
Sift dry ingredients and add to margarine mixture. Spread on prepared cookie sheet. Spread chocolate chips evenly over mixture.
FOR THE TOPPING:
Beat egg whites until stiff. Fold in the remaining 1 cup brown sugar. Spread evenly over top of cookie dough.
Bake in 350 degree oven about 20 minutes or until lightly browned or a toothpick inserted comes out clean. Cut into bars.
