Recipe(tried): Creamed Bologna on Toast....Creamed Dried Beef on Toast

Hi Nancy,
I've never had creamed bologna on toast, but i do have this recipe for Creamed dried beef.
I was thinking you could eliminate the dried beef and substitute the bologna.
If I were going to do this, I would probably cut the bologna in bite size pieces and brown it a little bit in a skillet to enhance the flavor and then proceed with the recipe.
Basically, it is a white sauce, with the meat and hard boiled eggs added, and served over toast.

CREAMED DRIED BEEF

1 jar sliced dried beef
2 hard boiled eggs
2 cups milk
3 Tbsp. flour
3 Tbsp. butter or margarine
Toast

Take dried beef from jar and put it in a strainer, run hot water over it to remove some of the salt. Squeeze out all the water and chop meat into bite sized pieces.

Make a white sauce:
Melt the butter in a saucepan, add the flour and mix well.
Let the mixture bubble and cook for a few minutes, turn down the heat and gradually add the milk, whisking constantly to keep it smooth. If it gets too thick add more milk. When sauce has thickened, add the dried beef.

Peel and chop the eggs and add them to the mixture.

Serve over toast.
