Recipe: Creamy Macaroni and Cheese (using sour cream and mayonnaise)

Creamy Macaroni and Cheese

2 quarts water
1 teaspoon salt
1 (8-ounce) package elbow macaroni
4 cups shredded Cheddar or Jarlsberg cheese
1 (8-ounce) carton sour cream
1 cup mayonnaise
2 tablespoons chopped onion
1 cup crushed cheese crackers

Bring water and salt to a boil in a large Dutch oven; stir in macaroni. Return to a rapid boil, and cook 8 to 10 minutes, or until tender; drain. Rinse with cold water; drain.

Combine macaroni, cheese, and next 3 ingredients. Spoon into a lightly greased 11x7x1 1/2-inch baking dish; sprinkle with crushed crackers.

Bake at 325F for 30 to 35 minutes.

NOTE: To reduce fat and calories, substitute nonfat sour cream, fat-free mayonnaise, and reduced-fat Cheddar cheese.
