Recipe: Creamy Pumpkin Pie Smoothie (using apple juice concentrate, blender)

CREAMY PUMPKIN PIE SMOOTHIES

1 cup low fat soy milk
1/2 cup apple juice concentrate
1/3 cup canned pumpkin puree (not sweetened pie filling)
1/4 teaspoon ground cinnamon
1/2 teaspoon vanilla
Dash nutmeg
1/2 frozen banana
6 ice cubes
Add one or two of the following per serving (optional):
1/2 tablespoon rice protein powder
1 1/2 teaspoons flaxseed oil
1 tablespoon almonds
1/4 teaspoon acidophilus powder

Place soy milk (or your choice of any other milk or non-dairy substitute) and all remaining ingredients in blender in order given. (If adding protein powder, add first and blend with liquid.)

Blend until smooth and creamy. If desired, add optional nuts last for "crunch."

Makes 3 cups (serves 2, serving size 12 oz.)
