Recipe(tried): Crock Pot Chicken Fajitas

Well, I finally got my slow cooker, and yesterday I was at a seminar all day, and decided to put it, and my DH, to work. I assembled this recipe the night before, and left instructions for it to be placed in the slow cooker at 11 am the next day, in anticipation of my arrival home, at approximately 5:30 pm.

I am happy to report all went well, and we sat down to a delicious dinner, only minutes after my arrival home. In those few minutes, I grated some cheddar, tore up some salad greens (an organic mix from Costco, it's really excellent), and diced a tomato to accompany the tasty concoction waiting for us in the slow cooker. Oh, and while I diced and sliced, the microwave heated the tortillas.

I wish I could say every recipe I have tried in the slow cooker had turned out as well as this one. Alas, there appears to be a learning curve...just when I thought I knew it all, I found out there was more to learn. C'est la vie, eso es la vida!

Crockpot chicken fajitas:

3 or 4 boneless chicken breasts, sliced into strips
2 onions, sliced
chili powder, to taste(1 tbs)
cumin, to taste (1 tsp)
1/4 cup chicken broth

Place chicken in slow cooker, top with onion, sprinkle on seasonings,and pour broth over all. Cook on low for 5 hrs.

Give it all a good stir, and add:
1 pepper, sliced thinly (I used a yellow one, but you could use any colour, or better yet, a mix)
1 tbs lemon or lime juice

Replace lid of cooker, and while prepping toppings listed above and heating tortillas, let the mixture cook a bit further.

Spoon chicken mixture onto warm tortillas, add toppings of choice, fold up...and enjoy!
