Recipe: Fast Mango Chutney (using apricot jam, pear, cranberries and raisins)

Toppings - Assorted
FAST MANGO CHUTNEY

1/4 cup sugar
1/2 cup apricot jam
1 3/4 cups water
1/2 teaspoon curry powder
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
4 whole cloves
1 unpeeled lime, minced
2 cups chopped mango
2 cups fresh or frozen cranberries (or sliced rhubarb)
1 hard pear, seeded, peeled and diced
1/2 cup golden raisins

Combine sugar, jam, water, curry powder, ginger, cinnamon and cloves in a large saucepan. Bring to a boil. Add lime, mango, rhubarb and pear and cook, uncovered, 10 minutes.

Add raisins and cook 10 more minutes. Cool to room temperature.

Chill before serving. Store in refrigerator.

Makes 4 cups
