CRUSTLESS PUMPKIN PIE
2 eggs
3/4 cup sugar
1/2 tsp salt
1 can evaporated milk
1 1/2 cups pumpkin (the small can, not the big one)
1/2 stick butter, melted
2 Tbsp pumpkin pie spice
1/2 cup baking mix (Bisquick)
Mix all ingredients together and beat until well blended. Pour into pie pan.
Bake at 350 degrees F for 45-50 minutes until it tests done with a knife.
