Recipe: Cucumber,LimeJello,Cottage Cheese Salads

Chances are your grandmother or one of
her friends used to make this recipe.
It is a classic and would be great for
St. Patrick's day. Here are two
versions of the same recipe (recently
posted on Cooking Club Board)

1 pkg lime gelatin
1 tsp salt
1/2 C hot water
2 T lemon juice
1 small grated onion
1 C mayo
2 C finely grated cucumber, drained
1 C fine curd cottage cheese

Dissolve gelatin & salt in hot water. Add lemon juice & onion.
Chill until slightly thickened. Fold in mayo, blending
thoroughly. Fold in cucumber & cottage cheese. Mix well. Pour
into ring mold. Chill until very firm. Unmold on greens.
Serves 8 (Particularly good w/seafood or ham)

CUCUMBER MOLDED SALAD

1 pk Lime gelatin (3 oz.)
1 c Hot water
1 c Cucumber, scrubbed & grated
1/2 c Onion, grated
1 c Sour cream
1 c Cottage cheese
1 c Mayonnaise

Dissolve gelatin in hot water. Let cool. Add cucumber
and onion to gelatin. Fold in sour cream, cottage
cheese, and mayonnaise. Pour into 6 cup mold and
refrigerate at least four hours before serving.
