St. Patrick's Day ideas

We love St. Patrick's Day - every year the leprechauns visit our house and
leave gold chocolate coins and other goodies for the kids!

For a tea, maybe cut out little corned beef sandwiches with a shamrock cutter.
Irish soda bread with butter or jam would be easy. Last year I made shamrock
cookies sprinkled with green sugar, and this year I think I'll make shortbread
thumbprints with mint jelly instead of my usual strawberry and apricot.

Every year I make a green cake or cupcakes with cake mix (which I don't usually
use, but I'm too lazy to figure it out from scratch), pistachio pudding and
Dream Whip mix. Let me know if you want me to post recipe.

I also am thinking about cutting out half-circle sugar cookies and having the
kids paint rainbows on them with food coloring.
