Recipe: Curry Crackers

CURRY CRACKERS

3 tbsp margarine
1 1/2 tbsp onion, minced finely
1 tsp garlic, pressed
3/4 tsp grated ginger
1 1/2 tsp ground cumin
1 1/2 tsp ground coriander
1 1/2 tsp turmeric
1/2 tsp cayenne pepper
2 cups all purpose flour
1 tsp salt
approximately 1/2 cup water

Preheat oven to 325 degrees F.

Melt margarine in a small frying pan. Add onion, garlic, and ginger; saute until the onion is translucent. Add spices and stir fry for 1 minute.

In a large bowl, combine flour and salt. Add spice mixture and blend well. Slowly add as much water as is needed to make a dough.

Divide the dough into 2 equal portions and roll out to 1/16-inch thickness. Cut into 2-inch shapes and prick with a fork. Place on lightly greased baking sheets.

Bake for 20 to 25 minutes until crisp. Remove from sheets and cool on wire racks.

Serve with dips.

Makes 90 Crackers
