PENNSYLVANIA CABBAGE AND SAUSAGE
So easy - especially if you start with purchased coleslaw mix! Just chop the apple and slice the sausage, then you're ready to cook.
5 cups coleslaw mix (or coarsely shredded cabbage)
1 apple, coarsely chopped
2/3 cup apple cider or juice, divided use
2 Tbsp. Dijon-style mustard
1 Tbsp. cornstarch
1/2 to 1 tsp. caraway Seed
1/2 tsp. instant chicken bouillon granules
1/8 tsp. pepper
1 lb. fully cooked link smoked turkey sausage, sliced
Prepared mustard (optional)
In a 2-quart microwave-safe casserole combine the coleslaw mix, the apple, and 1/3 cup of the apple juice. Micro-cook the mixture, covered, on 100% power (high) for 8 minutes or till the cabbage is almost tender, stirring once.
In a small mixing bowl combine the remaining 1/3 cup apple juice, the Dijon- style mustard, the cornstarch, the caraway seed, the bouillon, and the pepper. Stir into the cabbage mixture along with the sausage.
Cook cabbage-sausage mixture, uncovered, on high 3 to 5 minutes or till thickened and bubbly, stirring twice. Serve with mustard.
Makes 4 servings
