Dampfnudeln (f r die Brotmaschine)

You will need a large baking dish that has a cover. I use a large Corningware roaster. Spray the baking dish with non-stick spray. You will also need something to accompany the Dampfnudeln, such as vanilla sauce, fruit compote, or applesauce. (For easy vanilla sauce, get vanilla pudding, and whisk in milk to desired consistency.)
Put in a 2-pound capacity bread machine:
1 cup milk
2 eggs
5 tablespoons butter, cut into chunks
4 cups flour
2 1/2 tablespoons sugar
1/4 teaspoon salt
2 1/4 teaspoons bread machine yeast
Use dough cycle.
During the last 15 minutes of the dough cycle:
In a microwavable bowl, put:
2 cups milk
3 tablespoons sugar
3 tablespoons butter
Microwave about 1-2 minutes, or until butter melts and sugar dissolves. Put milk mixture into large baking dish that has a cover. I use a large Corningware glass roaster. Let the mixture cool to lukewarm.
When the dough is done, hand-knead the dough one last time. Make 12 equal sized balls out of the dough, and place on top of the milk mixture in the baking dish. Let rise until double (about an hour).
Bake at 350 F. for about 30 minutes, or until lightly browned on the top.
Serve with vanilla sauce, fruit compote, or applesauce. For a light meal, serve soup as a first course, then the Dampfnudeln as a main course. Or serve as dessert, one on a plate topped with vanilla sauce.
