Recipe(tried): Danish Almond Paste Cookies

Claudia! This is not exactly what you are looking for but these cookies are good. I also have a recipe for "Scandinavian Almond Cookies" will post later

Danish Almond Paste Cookies:-
Almond Paste: Can be bought in most stores now, or it can be made at home.
1 cup finely ground blanched almonds with 1/2 cup sugar, 1 small egg, 1/4 teaspoon vanilla, and a few drops of yellow vegetable coloring. Mix thoroughly and knead with hands into a smooth paste.
Set oven at 375 deg.
1 cup butter
1/4 pound almond paste
1/2 cup superfine sugar
1 egg. beaten
2 cups sifted flour
1/8 salt
Colored icing sugar

Cream butter with almond paste. Beat in sugar gradually; add egg. Stir in flour sifted with salt. Mix thoroughly. Shape through cookie press in the shape of daisies. Fill centers with colored icing. Bake 10-15 minutes or until golden. Lorelee
