Recipe: Date Loaf (1950's)

Breads - Muffins, Quick Breads
DATE LOAF

1 cup chopped dates
3/4 cup brown sugar
1 teaspoon salt
1/2 cup boiling water
1 egg
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup chopped nuts
1/4 cup melted shortening

Into a mixing bowl measure 1 cup chopped dates, 3/4 cup brown sugar, 1 teaspoon salt and 1/2 cup boiling water. Stir and let stand until cool.

Then beat 1 egg well and add it and 1 teaspoon vanilla.

Sift all-purpose flour and measure 1 1/2 cups and sift it with 1 teaspoon baking powder and 1 teaspoon baking soda. Add them and stir quickly. Add 1/2 cup chopped nuts and 1/4 cup melted shortening. Stir just enough to blend.

Pour into loaf pan about 9 x 5 x 3 inches, which has been greased and lined with buttered waxed paper.

Bake at 325 degrees F. for 1 hour. This cuts better when 24 hours old.
