Hi Nancy,

Here are a few recipes for you to check out. If you have a cornbread recipe using oil that you like you can replace the oil with melted shortening or butter (I usually do the reverse in muffin and quick bread recipes, substituting oil for melted butter or melted shortening). If none of these are what you're looking for, please feel free to post again with more specifics about the recipe.
