Recipe: Date-Nut Bread (1960's)

Breads - Muffins, Quick Breads
DATE-NUT BREAD

1 1/2 cups pitted dates, halved
1 cup boiling water
2 cups sifted flour
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup sugar
1 cup coarsely broken walnuts

Pour boiling water over dates; cool.

Sift together the flour, baking soda and salt. Beat together eggs and sugar; stir in sifted dry ingredients, date mixture and walnuts.

Fill 4 or 5 well greased 5x3-inch mini loaf pans half full; place on cookie sheet.

Bake in moderate (350 degree F) oven for 45 to 50 minutes or until cake tester inserted comes out clean. Turn out; cool. Store tightly covered.
