Recipe(tried): Dearest Micha: I'll be delighted to have you in my experiment of cooking class.

Misc.
If you look carefully at the Menu it consist of a few dishes that are very good but easy. I agree that the BAKLAVA used to be a terror to prepare because of the phyllo dough. I was never an expert with phyllo & that was somewhat of a problem because I love greek cooking & also in Puerto Rico we do some round phyllo pastries stuffed with Picadillo or with ground chorizos that are a delight (Pastelillos de Carne o de Chorizo). But then, merchants began importing frozen phyllo to be sold at supermarkets and now we can buy it also from bakeries by just placing an order ahead of time. Therefore, Baklava or Snakopita are now easy compared to what it was.

But what I will love is to meet you & your husband personally because I know that we have similar tastes & that we will enjoy the visit greatly. If I survive the class (hopefully) and if my friends survive my obsessive love for order, I think that a Tuscan Menu might be a good idea. We just will see my friend.

I hope you will have a wonderful time in Maine.

Best wishes from,

Gladys/PR
