Recipe: Deep Dish Apple Cobbler

DEEP DISH APPLE COBBLER

5 Granny Smith apples thinly sliced
3 tablespoons sugar
2 teaspoons lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 large eggs
1 cup sugar
2 tablespoons butter, melted
1 teaspoon vanilla
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
whipped cream or vanilla ice cream (optional, for serving)

Combine first 5 ingredients in a large bowl; stirring to coat apple slices. Pour in to a lightly greased 8 inch square baking dish.

Beat eggs with a mixer at medium speed until blended. Add butter and vanilla beating until smooth.

Combine flour, baking powder and salt. Fold in to egg mixture. Spread over apple slices.

Bake at 350 degrees F for 30 minutes or until lightly browned.

Serve with whipped cream or vanilla ice cream if desired.
