Recipe: Diamond Walnut Classic Banana Bread

DIAMOND WALNUT CLASSIC BANANA BREAD

1 cup granulated sugar
1/2 cup shortening
2 eggs
1 teaspoon vanilla
1 cup mashed ripe bananas
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 cup chopped Diamond Walnuts

Preheat oven to 350 degrees F. Grease a 9x5-inch loaf pan.

Combine sugar, shortening, eggs and vanilla; beat until light and fluffy. Blend in banana.

Combine flour, baking powder and salt. Add to banana mixture; stir just until dry ingredients are moistened. Fold in walnuts. Spoon batter into greased pan.

Bake for 60 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan and cool on wire rack.

Makes 1 loaf
