Recipe: Dill and Buttermilk Dressing

Dill and Buttermilk Dressing
Source: The Complete Book of Sauces by Sallie Y. Williams

1/2 cup buttermilk
1/4 cup heavy cream
4 scallions, white part only, minced
1/3 cup chopped fresh dill
1 garlic clove, minced
2 tablespoons olive oil
1 tablespoon fresh lemon juice
salt and freshly ground pepper, to taste

Combine in a food processor or blender until smooth. Chill overnight to let flavors develop. Serve at room temperature.
