Recipe: Cold Balsamic Noodles

Cold Balsamic Noodles

Here is one of my favorite uses of balsamic vinegar. Great as an appetizer, for picnics, as a companion dish. Excuse the rough measurements, just fool around until you get it right for you.

cook about 1/2 lb. of thin Japanese noodles

mix the following:
2 tbsp. soy sauce/tamari/shoyu
2 tbsp. balsamic vinegar
2 tbsp. water
1 finely chopped clove of fresh garlic
a little bit of chili oil

Toss the mixture with the noodles, and refrigerate. Mix every once in a while to distribute the sauce evenly. Let chill for at least 4 hours.
