Recipe: Blueberry Vinaigrette

Salads - Salad Dressings
BLUEBERRY VINAIGRETTE

1/4 cup blueberry vinegar
5 tablespoons salad oil
salt and pepper to taste
2 teaspoons chopped fresh parsley
1/4 teaspoon orange or lemon zest
2 teaspoons onion, minced

Combine ingredients in lidded jar. Shake until thoroughly blended.

Allow to stand at room temperature 1 hour to blend flavors. Chill.

Shake before serving,

Makes about 1 1/2 cup
