Recipe: Cherry Chocolate Chip Cookies (using maraschino cherries and coconut)

CHERRY CHOCOLATE CHIP COOKIES

1 1/4 cups all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/2 cup butter or margarine, softened
1/3 cup white sugar
1/3 cup light brown sugar
1 egg
1/2 tsp. vanilla
3/4 cup flaked coconut
1 (6 oz.) pkg. semi-sweet chocolate chips
1/2 cup chopped nuts

Preheat oven to 375 degrees F.

In medium bowl mix flour, baking soda, and salt; set aside.

In large bowl with mixer at slow speed, cream butter and sugars. Add egg, and vanilla; beat until well blended. Add flour mixture, beat until well blended. Stir in coconut, chocolate chips and nuts. Drop by tablespoon 2 inches apart on ungreased cookie sheet.

Bake 12-15 minutes until lightly browned. Remove to wire rack to cool. Store in tightly covered container.

Makes 2 1/2 dozen
