DOUBLE CHOCOLATE CHIP COOKIES
1/2 cup shortening
1 cup packed brown sugar
1 egg
1/2 cup sour cream
1 tsp. vanilla
1 (12 oz.) pkg. Ghirardelli Semi-sweet Chocolate Chips, divided use
1 3/4 cup unsifted flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup chopped pecans
1/4 cup chopped maraschino cherries (optional)
Cream shortening with brown sugar. Mix in egg, sour cream, vanilla; set aside.
Melt 1 cup chocolate chips and blend with creamed mixture. Stir flour with salt, baking powder, baking soda. Add dry ingredients to creamed mixture, stirring until smooth.
Fold in nuts, well-drained cherries and remaining 1 cup chocolate chips. Drop by heaping teaspoon onto greased baking sheet.
Bake at 350 degrees F for 10-12 minutes or until slightly cracked on top.
Makes 5 dozen cookies
