To drain fat from gound meat, pour into a colander and let sit to drain off as much fat as possible. I then pour boiling water over the meat, and let the water drain and put it back in the pan to brown again. This gets rid of most of the fat and we do not find the taste affected at all. By the way June and Many Hats I use the same method as you in disposing of the fat.
