DRIED APPLE CAKE WITH COCONUT ICING
3 cups cooked, dried apples
3 tsp. baking soda
1 cup Crisco vegetable shortening
2 cups sugar
4 1/2 cups self rising flour
3 tbsp. cocoa
1 tsp. cinnamon and cloves
1 1/2 cups chopped pecans
1 1/2 cups raisins
Icing for Dried Apple Cake (recipe follows)
Cook dried apples in enough water to cover. Cook about 30 minutes; let cool. Add baking soda and set aside.
Preheat oven to 350F. Grease 4 (8 or 9-inch) round cake pans.
Beat Crisco until light, add sugar and beat well.
Add flour, 1 cup at a time. Add cocoa, cinnamon and cloves. Add pecans and raisins.
Sitr in cooked apples. Place batter in prepared cake pans.
Cook at 350 degrees in prepared pans. Place on wire racks to cool. When cooled fill and frost with icing.

2 cups coconut
3 lemons (juice and grated rinds)
1 1/2 sticks (3/4 cup) margarine
Combine all ingredients, bring to a boil and simmer for 10 minutes.

I haven't tried this cake but I'm hoping that it's similar to the one you're looking for. There are quite a few versions of cakes using dried apple so if you can describe the cake or ingredients it would be helpful.
