8-20-99 Drop Cookies Part 3

Terrytx 10:18:43 Original Toll House Cookies

2 1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter-softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 eggs
1 (12 oz) pkg chocolate chips
1 cup chopped nuts-optional

Preheat oven to 375 degrees. Combine flour, soda, and salt; set aside. In large bowl, cream butter, sugar and vanilla; beat until creamy. Beat in eggs. Gradually add in flour mixture; mix well. Stir in chocolate chips and nuts. Drop by spoonfuls onto cookie sheets. Bake at 375 degrees for 8-10 min.

18 1/4 ounces cake mix (any flavor)
2 eggs
1/3 cup vegetable oil
**any 1 or 2 of the following:
6 ounces mini chocolate chips
6 ounces butterscotch chips
6 ounces peanut butter chips
1/2 cup coconut
1/2 cup raisins
1 cup toffee chips
1 cup chopped nuts

Preheat oven to 350 degrees. Combine all ingredients and mix well. Drop by rounded teaspoon onto ungreased cookie sheet. Bake 9-12 minutes.
*I used a white cake mix with peanut butter chips.....very good.
**I think using a carrot cake mix with white chocolate chips would be wonderful!

M&M Cookie Pops

Serving Size : 15

2 1/4 cups flour
3/4 teaspoon baking powder
1/4 teaspoon salt
1 cup unsalted butter
3/4 cup sugar
1/2 cup light brown sugar
2 eggs-large
2 teaspoons vanilla
2 cups M&M candies

In a large bowl, mix flour, baking powder and salt. In a separate bowl cream butter and sugars, then add eggs one at a time, mixing well after each addition. Stir in vanilla extract. Gradually add flour mixture until combined. Add M&M's and stir again. Preheat oven to 300 degrees. Using 1/3 cup measuring cup, drop dough onto baking sheets about 3" apart. Insert a Popsicle stick at least 1 inch deep into each one to form a pop. Bake for 30-35 minutes. Set the baking sheet on a wire rack to cool. Using a metal spatula, transfer to wire rack to cool completely.
NOTES : For chewier cookies refrigerate dough overnight.

Gooey Butter Cookies
Recipe By :St. Louis Post-Dispatch 9/1/97
Serving Size : 48

1/2 cup butter -- (1 stick)
1/4 teaspoon vanilla
1 egg
1 package cream cheese -- (8-ounce)
1 box butter-recipe yellow cake mix
Powdered sugar-for dipping
Nonstick cooking spray

Beat butter, vanilla, egg and cream cheese until light and fluffy. Mix in dry cake mix. Chill for 30 minutes.
Preheat oven to 350 degrees. Lightly coat cookie sheet with cooking spray. Drop dough by teaspoonfuls in bowl of powdered sugar; roll into balls.
Bake for 12 minutes or until golden brown.
Yield: 4 dozen cookies.

Ritz Mint Cookies (Girl Scout Cookies)

1 pound Mint Chocolate melting chips (Wilton's)
1 package Ritz crackers
Melt Chocolate. Dip Ritz crackers. Drain well. Place on wax paper on a cookie sheet. Place in freezer till set.

Pineapple Cookies

1 cup shortening
1 cup granulated sugar
1 cup brown sugar
2 eggs
4 cups flour
1 teaspoon soda
1 teaspoon salt
1 teaspoon baking powder

Mix well, then add 1 (No. 13 1/2 ounce) can of crushed pineapple. Mix and with teaspoon, put on buttered sheet. Space well. Bake at 400 degrees.

Thumbprint Cookies

1/2 cup butter
1/4 cup brown sugar
1 egg-separated
1/2 teaspoon vanilla
1 cup flour-sifted
1/4 teaspoon salt
walnuts-finely chopped
assorted Jams or jellies

Mix thoroughly the butter, brown sugar, egg yolk, and vanilla. sift together then add; flour and salt. Beat egg whites and set aside. Roll small balls (about 1 inch). Dip in beaten egg whites. Roll in finely chopped nuts. Place 1 inch apart on ungreased baking sheet. Bake 5 minutes. Remove from oven and quickly press thumb gently on top of each cookie. Return to oven and bake 8 minutes longer. Fill the thumbprint with your favorite flavored jelly or jam. ( Our favorite is raspberry or strawberry)

Easter Story Cookie

To be made the evening before Easter
You need:
1c. whole pecans
1 tsp. Vinegar
3 egg whites
pinch salt
1 c. sugar
zipper baggie
wooden spoon
tape
Bible

Preheat oven to 300
Place pecans in zipper baggie and let children beat them with the wooden spoon to break into small pieces. Explain that after Jesus was arrested. He was beaten by the Roman soldiers. Read John 19:1-3.
Let each child smell the vinegar. Put 1 tsp. vinegar into mixing bowl.
Explain that when Jesus was thirsty on the cross he was given vinegar to drink. Read John 19:28-30.
Add egg whites to vinegar. Eggs represent life. Explain that Jesus gave His life to give us life. Read John 10:10-11.
Sprinkle a little salt into each child's hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty> tears shed by Jesus' followers, and the bitterness of our own sin. Read Luke 23:27.
So far the ingredients are not very appetizing. Add 1 c. sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He wants us to know and belong to Him. Read Ps. 34:8 and John 3:16.
Beat with a mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents the purity in God's eyes of those whose sins have been cleansed by Jesus. Read Isa. 1:18 and John 3:1-3.
Fold in broken nuts. Drop by teaspoons onto wax paper covered cookie sheet. Explain that each mound represents the rocky tomb where Jesus' body was laid. Read Matt. 27:57-60.
Put the cookie sheet in the oven, close the door and turn the oven OFF. Give each child a piece of tape and seal the oven door. Explain that Jesus' tomb was sealed. Read Matt. 27:65-66.
GO TO BED! Explain that they may feel sad to leave the cookies in the oven overnight. Jesus' followers were in despair when the tomb was sealed. Read John 16:20 and 22.
On Easter morning, open the oven and give everyone a cookie. Notice the cracked surface and take a bite. The cookies are hollow! On the first Easter Jesus' followers were amazed to find the tomb open and empty. Read Matt. 28:1-9
