8-20-99 Drop Cookies Part 2

Judy/AZ 05:33:19 OATMEAL PEANUT BUTTER CHOCOLATE CHIP COOKIES

1 1/2 cups old-fashioned rolled oats
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 sticks (1 cup) unsalted butter, softened
1 cup granulated sugar
1 cup firmly packed light brown sugar
1 tablespoon vanilla
3/4 cup peanut butter
2 large eggs
a 12-ounce bag semisweet chocolate chips
8 ounces semisweet chocolate, grated

In a food processor pulse 1 cup oats until ground fine. In a large bowl stir together ground oats, remaining 1/2 cup whole oats, flour, baking powder, baking soda, and salt.
In another large bowl with an electric mixer beat together butter and sugars until light and fluffy and beat in vanilla and peanut butter. Add eggs, 1 at a time, beating well after each addition, and gradually beat in flour mixture. Add chocolate chips and grated chocolate, beating just until combined. Chill cookie dough, covered, at least 2 hours and up to 1 week.
Preheat oven to 325 degrees F.
Form rounded tablespoons of dough into balls and arrange about 2 inches apart on ungreased baking sheets. Flatten balls slightly.
Bake cookies in batches in middle of oven 15 minutes, or until just pale golden. Cool cookies on baking sheet 5 minutes and transfer to racks to cool completely.
Makes about 60 cookies.

2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
3/4 teaspoon cinnamon
1 1/3 cups butter
1 1/4 cups granulated sugar
3/4 cup brown sugar-packed
2 eggs
2 tablespoons water
1/2 teaspoon vanilla extract
2 1/2 cups uncooked rolled oats(not instant)
1 1/4 cup raisins

Combine flour, salt, baking soda, baking powder and cinnamon and set aside. Cream butter by beating until light and fluffy in very large bowl. Beat in granulated and brown sugars. Beat in eggs, 1 at a time. Add water and vanilla and mix until well blended, about 5 minutes. Add oats, raisins and flour mixture to sugar mixture and stir until thoroughly blended. Drop by large tablespoons onto ungreased baking sheets. Bake at 350 degrees until light brown, 10 to 15 minutes. Cool on baking sheet.

Marie,Ohio 07:44:06 Pumpkin Cookies.. yield 4-5 dozen

Cream together the following
1 C. shortening
1 C. sugar
1 C. pumpkin
Add 1 egg and beat well
Add:
2 C. flour
1 t. baking powder
1 t. cinnamon
1/2 t. salt
1 C. chopped nuts
Drop by spoonfuls onto baking sheet
Bake 10-12 min. @ 375
Cookies will be soft..
Frost while warm
Heat 'til dissolved
3 T. butter
4 t. milk
1/3 C. brown sugar
Cool
add
1 C. powdered sugar
3/4 t. vanilla
stir until creamy..
nice little cookie. Enjoy!

3/4 c. oleo
1 c. sugar
1 egg
1/4 c. molasses
2 c. flour
1/4 tsp. salt
2 tsp. soda
1 tsp. cinnamon
1 tsp. cloves
1/2 tsp. salt

Beat oleo and sugar, add molasses and egg and beat well. Add dry ingredients.
Roll in a ball and then dip in sugar. I use a tablespoon or a small cookie dipper of dough. Bake at 375 10 minutes.
I always double the recipe.

Verla,.Il 10:12:08 Orange Cookies---Christmas Favorite

1 c. butter
2 c. sugar
1 c. buttermilk
Rind of 2 oranges, grated
Juice of orange to make 1/2 cup
4 1/2 c. sifted flour
1 tsp soda
1 tsp baking powder

Dissolve soda in buttermilk and add baking powder to flour. Cream butter and sugar, add eggs and beat well. Add orange juice and rind. Add flour and milk alternately.
Drop bake at 350 8 to 10 minutes
When cool ice with orange frosting.

Miracle Orange Frosting
Combine everything in a double boiler over simmering water.
Blend until smooth. Remove from heat. Cool, stirring frequently until frosting reaches a desired spreading consistency.
These melt in your mouth!

2 oz. unsweetened chocolate, melted
1/2 cup butter, softened
1 cup granulated sugar
2 large eggs
2 tsp. vanilla
1 1/2 cups flour
1/2 tsp. baking soda
1/2 cup white chocolate chips
1 1/4 cups semisweet chocolate chips
1/4 cup milk chocolate chips

Preheat oven to 350 F.
Cream the butter and sugar. Add the melted chocolate and then add the eggs and vanilla and beat until smooth. Sprinkle the baking soda over mixture and blend in. Blend in flour. Stir in all the chips. The dough will be soft and sticky. Place dough by rounded tablespoons 1" apart on cookie sheets that are either lightly greased or lined with parchment paper. Bake for 8 to 10 minutes. Cookies may not appear done. Let them cool on the sheet for 10 minutes before removing to a rack. You then have the horrible task of eating 1 or 2 cookies to make sure your first batch is baked to the desired doneness. We all have our crosses to bear.....
This recipe doubles easily - I ALWAYS double it - and the cookies freeze quite well.

1 cup butter or margarine
1 1/2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups unsifted all-purpose flour
2/3 cup cocoa
1 small pkg instant chocolate pudding
3/4 teaspoon baking powder
1/2 teaspoon salt
2 cups (12 oz) Reese's Peanut Butter chips

Cream butter, sugar, eggs, and vanilla until light and fluffy. Combine flour, cocoa, soda, pudding and salt; add to creamed mixture. Add peanut butter chips. Drop by spoonfuls on ungreased cookie sheets. Bake at 350 degrees for 8-10 min. Cool 1 min. before removing from sheet. Yield: 5-dozen-2-1/2" cookies

Oatmeal-Corn Flake Cookies

1/2 cup oleo or butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1/2 tsp vanilla
1 cup sifted flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup corn flakes
1/2 cup oatmeal
1/2 cup coconut
1 cup chopped pecans

Cream butter and sugar together, add egg and vanilla, beating well. Sift flour, baking powder, soda and salt together. Add all ingred. together until moistened. Drop by teaspoonfuls on coated cookie sheet. Bake in moderate oven 12-15 min.
NOTES : This recipe came with my Mother's Mix-Master that she received as a wedding gift, in 1946.
