Recipe(tried): Mexican Cocada (Coconut Custard) - Recipe Fix

I'm afraid the sugar to water ratio is way off, 2 cups water to 2 cups sugar is too much. This is the first time I made the recipe, which I wanted to serve at my dinner party. We had a Mexican meal of enchiladas, refried beans and Spanish rice. I thought this recipe perfect for what I was serving; unfortunately due to following the recipe at first it failed to become pudding. It was soupy. The water was too much, I should have realized this from the moment I went to put in the coconut and it didn't absorb very much at all. I added more coconut, to no avail, but went ahead hoping it would work out. It didn't, I ended up adding cornstarch to thicken it. Yes it is delicious. Thank you for the recipe, though next time around i will be cutting the amount of sugar to 1 cup and the water to 1/4 cup that will make a true syrup for the coconut to absorb, but thank you again for the recipe.
