Recipe: Cracklin' Corn Bread (using bacon)

CRACKLIN' CORN BREAD

1 cup stone ground cornmeal
1 cup flour
1/3 cup sugar
1/4 cup salt

1 cup buttermilk
6 tbsp butter, softened
1 egg slightly beaten
1 cup cooked crisp, crumbled bacon

Preheat oven to 400 degrees F. Grease a 9-inch square baking pan.

Stir the dry ingredients together in a mixing bowl.

Stir in the buttermilk, butter, and egg; mix gently.

Fold in the crumbled bacon. Pour into prepared pan and set in the middle rack of the oven.

Bake for 25 minutes. Cornbread is done when the edges are lightly browned and a knife comes out clean.
