Recipe(tried): Easy Breakfast Potatoes (serves 1)

Breakfast and Brunch
OK, I wanted something to go with my usual scrambled eggs in the morning and came up with this.

EASY BREAKFAST POTATOES

Canola oil for frying
1 large or 2 medium potatoes. Peeled, and diced into 1/2-inch pieces.
1 or 2 scallions, chopped well
Dill (I like dill, so I go a bit heavy on this herb)
Adobo seasoning*
Salt and Pepper to your taste

Heat 2 to 3 tbsp. of oil in a pan. Saute the potatoes on medium heat, about 6 minutes.

Add the scallions, and remaining spices. Cook till the potatoes are done.

*Get Adobo seasoning in the Spanish section of your supermarket. Use it as you would use salt. This stuff is great on all kinds of food.

Note: I cook my eggs in the same skillet. Add toast, and you have a yummy addition to your usual breakfast fare...
